Ingredients
- 1 pound okra, trimmed and halved
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (14 ounces) diced tomatoes
- 1 cup vegetable broth
- Fresh cilantro, for garnish
Instructions

Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and cook until softened.

Add the okra to the skillet and cook for 5 minutes, stirring occasionally.

Stir in the cumin powder, paprika, salt, and black pepper. Cook for another 2 minutes.

Pour in the diced tomatoes and vegetable broth. Bring to a simmer and let cook for 20 minutes, or until the okra is tender.
